An Accidental Discovery

In 2002, we brought a small flock of hair sheep to our 23-acre ranch to manage heavy vegetation and reduce fire hazards. They did their job perfectly, but we soon discovered these black hair sheep were exceptional in another way entirely. When it came time to harvest, we found that they produced an incredibly delicious, highly nutritious, and naturally lean meat—completely free of the heavy, fatty taste associated with their wool-producing cousins.

The "Black Sheep" of the Industry

For years, the superior quality of hair sheep meat has been a trusted, highly valued staple in Latin cultures. Yet, to the broader English-speaking market, it has remained a massive secret. The name Black Borrego is a deliberate play on this reality. Because our animals are black, and because they have been largely unknown to the mainstream market, they are the literal "black sheep" or outcasts of the industry.

The word "Borrego" adds that layer of mystery. We aren't introducing something new; we are simply revealing what already exists. It is time to discover what the herd missed.
