The Manifesto

We don't follow the herd. We bridge the gap.

An Outcast by Choice

Black Borrego is not commodity lamb. We are not wool sheep. We are not mass-produced meat.

For generations, the exceptional quality of hair sheep meat has been known and highly valued by Latin cultures, yet largely hidden from the broader English-speaking market. Because our herd is black, and because they fall outside the mainstream understanding of lamb, they are the literal and figurative "black sheep" of the industry.

We aren't creating something new. We are simply revealing what already exists. It is time to discover what the herd missed.

Hair Sheep vs. Wool Sheep

Why choose hair sheep? The difference is in the biology, the resilience, and most importantly, the flavor.

Feature Black Borrego™
(Hair Sheep)
Standard Lamb
(Wool Sheep)
Flavor Profile Clean, mild, and highly superior. Heavy, distinctly "gamey" lanolin flavor.
Meat Quality High-quality, naturally lean cuts. A healthy meat alternative. Often carries a thick, greasy, heavy fat cover.
The Coat Hair coat that sheds naturally in the heat. Thick wool that requires intensive shearing.
Resilience Highly resilient, low maintenance foragers. Commodity bred, often requires higher intervention.
